The grape is Chardonnay of origin, coming from our oldest vineyard property, so that it is rich and complex.
The project started with the 2005 vintage. The must is fermented in French oak barrels for about 50 days and in the same environment malolactic fermentation takes place.
Finite fermentation begins the long period of enrichment in dry extracts, pulp and taste intensity through batonnages weekly for 30 months without racking and keeping the yeast in suspension throughout this period.
Each harvest produce 1000 magnum numbered consecutively from n. 1 to n. 1000 with individually wrapped solid wood.
This Chardonnay is called “Pensiero Infinito” because every year has a different label, which is a reproduction of a painting of the subject in an event, a person, a place or a time that our family does not want to forget.
